Sewage stink

Remodeling bathroom and disconnected toilet, sink, and replaced tub rough plumbing before P-trap to fit shower drain. Tested shower drain and no leaks. Everything has been disconnected maybe 3-4 months. We keep getting recurrent sewage smells, so we flush the drains with water to get the trap sealed again. But the stench comes back closer and closer together. First it was several weeks, than two weeks, now it seems to be every few days. Thoughts?

Toilet, sink lines are not connected.
I suspect you referring to just the supply lines, and the drain and vent lines are still connected. Are the toilet, lavatory, and tub/shower still present?

A smoke test would be best.
A peppermint test could be useful, but is a lot harder to use to track to a leak.

Do you know which fixture the smell comes out of? How about draping a cheap plastic dropcloth over each fixture. When you detect a smell, sniff under each to see which area is producing the smell.

Sometimes there could be a dead mouse producing a smell, but filling the plumbing traps would not make that problem go away for a day or so.

Toilet traps are internal to the toilet. If the toilet is removed and the drain pipe is open pouring water down the toilet drain will do nothing to keep sewer gas from entering the bathroom. It needs to be physically capped or plugged.
