quarter mile water line plumber nightmare

Hello

we have about 1300 feet from water meter to the house. This is in Texas outside of Dallas....
The plumber we hired did a terrible job and now we are seeing leaks and we were not onsite, and he ended up in jail, so we have real big problem at hand.
We bought 500 1 1/2 inch foot rolls, so we have 3 couplings, where we were planning of having junction boxes (to avoid any root coming into play).
The meter box has a 3/4 inch, so we convert that to a 1 1/2 inch.
Also, at each junction box we used poly to PVC adapter (see pic with sharkbite compression) so we can have a ball valve and also a T to have a spigot there.

Here are the problems:

1) the poly to pvc adapter came off due to pressure at the 1000 ft mark
2) the plumber made an additional coupling near the 1000 ft because he cut the pipe too short
3) in some places the depth of the trench is less than 12 inches - but most of it is 12-18 inches.

Questions on how to get out of this mess:

1) it looks like the brass fittings work better and are stronger than plastic - should we go through brass instead or butt fusion ?
If we go through brass etc, how to get a T for a spigot ?
2) the additional coupling he made for about 6 feet at the 1000 ft mark - is that ok to leave it ? dont want to run another 500 ft line :)
3) where it is less than 12 inches in some spots how to fix it ? do we just dig around it and lower it ? or do we just bury more soil/rocks on top to make it atleast 12 inches ?
4) any suggestion to get out of this mess without having to remove all the piping and retrench and do it all over again ?

the pic below shows the 1000 ft junction, where we are having issues and also at the water meter.. obviously the plumber didnt put the pipes deep at the junction..

Sorry for problems but fusion fittings 1 or 2 is better than a mechanical joint. What did he use for the trench? Did you ask for a specific depth? Did tou want rhe line in cased in rock?

what about brass fitting ? we asked for 18 .. but at a few spots it was not done.. a lot of it was sloppy work... and kind if hid it up quickly... we just want to the best way to get out of this dilemma.. what would you do ?

Unless you're fusion connecting brass is best. Where you want to splice off I would use 2 male adapters and a brass threaded reducing tee to a brass ball valve.
