Hi so i am going to cut out this manafold but I still want to know exactly where the slab leak is, because I am putting a temp fix on it to restore water to my house while I do some other work. If I leave the pipes in place can a slab leak detection company still use them to find the leak location? (I think I know where it is but not sure)

Desoldering is the best way to go.
With cleaned off and rounded joints, then pressure can be applied from whatever source you choose to each zone and ultrasonic/sonic leak detection utilized.
Push-on adapters would be used.
