Drywall seams visable only at night

I would love to hear some advi e on my situation. Im currently getting my house fixed "professionally" after water damage. My kitchen ceiling needed an decent area replaced, after it got replaced an fixed it looked good at least i thought until i noticed (at 3am ) that i can see lines where it was fixed. During the day i cant see them but can see it only from dusk to dawn. Is this the outcome im supposed to have? Im not a contracter so idk anything about this.

My ex girlfreind noticed the drywall seams too pretty much every night she would see them

When I go to peoples homes to look at remodel projects I call it buildings forensics. I use a bright flashlight aimed across the flat surface to show all the imperfections. The shadows reveal the dips and bumps.

Wall texture is often used to hide imperfections like that... but that's pretty bad.
