Couple things you could do to gain that 1" in height but of course the simplest would be to just use a special trap. A "low inlet trap" would probly let you make the connection. The inlet on these are extremely shallow so make sure you have a square cut on the bottom of the tee and you seat it completely into the trap.
I would rather recommend you throw the Tee away and just continue the drain out from the wall with a wye and individually trap each sink compartment. That would save you the space of the tee.
Another way is to cut open the wall around the drain and lower the drain in the wall. Fairly easy project if the drain is coming straight up to a san-tee and vent, but could be hard and mean alot of wall to tear open if it is a horizontal waste arm.
If all else fails, i'm sure she would settle for some shallow S.S. duo strainers than to be with out a kitchen sink...
