Your problem may be complex, but I think that if water shoots out while the pressure gauge says zero, your pressure gauge is bad.

Try putting a garden hose thread pressure gauge on the drain valve, and see how the gauges compare.

How could water shoot up after removing the pressure switch if the pressure was at zero? Should not have been any water. Possible cross connection with a system that has 100 PSI or so? Could check with an amp meter. A 3HP draws about 17 amps or so if pumping water. If the switch really turns off the pump, and the amps drop to zero, water has got to be coming from a different location.
The top of the tanks is higher than the pressure switch.

The top of the tanks is higher than the pressure switch.
2.31'water level= 1 lb pressure
If the air charge in tanks are higher than switch pressure will raise the system pressure. Water is trapped between pumps foot valve and irrigation valves. But with 103 lbs in the tanks they would be empty.
