Whole house plumbing advice

Hello, I am looking to upgrade plumbing on my house, and am looking for some suggestions.

I currently have a point well in the basement of my farmhouse with roughly 2.5gpm flow from jet pump going into a 65gal pressure tank, pressure switch 30-50psi. House is roughly 1900sqft, 2 stories tall, 2 bathroom with the farthest 2nd floor bathroom roughly 50ft up-and-away from pressure tank. Water flow is poor, to the point of can only one run utility at a time: shower, or dishwasher, or washing machine, etc. Rest of house gets a trickle while that utility is running. Looking to put in a water softener system at the same time (18grain water).
For a constant flow system, I am thinking something like this:
Putting in either a bigger 119gal pressure tank or vertical water storage tank with float control right after well/jet pump>
>feed into Pside-Kick Pressure tank system w/4.5gal tank? 50-70psi switch ok?>
>feed to Water softener setup: Sediment filter>Fleck 5600/Fleck5600SXT-48000grain?

Usage: Currently household of 2 with kids on the way, on 5 acres. Small 25'x25'garden.

Does this sound like a good setup? Am I on the right track? Any other recommended upgrades to put in at the same time?

2.5 GPM really isn't enough to supply a house. But if you store it in a cistern or storage tank that will supply up to 3600 gallons per day that can be used at any flow rater needed. You will just need to store and use a boost pump to supply good pressure and flow to the house. You can use either a shallow well jet pump or a submersible in the cistern.
