General plumbing questions for DIY water softener install

So I decided on the Drop softener and ordered it. Should be here in a week and I'm now looking at specing out the parts, tools and supplies I need to do the install. I plan to move the location of the new softener away from the current softener location as the original location was dictated by the original layout of the utilities when the house was built and we had a 70 gal tank water heater. I can free up a lot of space/walking area if I move the new softener behind the furnace....just need to reroute water to/from that area, softener drain lines around furnace to floor drain, and move a 120v outlet over to that area. Originally I was going to have the plumber come back and do this, never discussed cost, but assuming I can borrow the press tool as I've been told, it really doesn't look that bad. Some general questions:

Plumbing
Original plumbing has a 3 valve copper bypass. Advice of plumber (guy who installed it all 20 years ago when we built the house, has done all mods since) was to scrap the old and not try to reuse it, just built new one ahead of time. I can do that, but looking at install guide for softener it looks like it comes with a simple bypass valve (guessing its plastic). So build my own out of copper and ball valves or just use softener bypass valve?
Existing expansion tank. I have a 20 year old thermal expansion tank in the basement utility ceiling area. When plumber was here replacing pressure regulator (the origin of this whole project!) he mentioned as part of discussing moving the softener that I would not need the expansion tank since we are on a tankless water heater now. When I google that, I get mixed opinions.
If I'm going to pro press all of the fittings, from what I can tell I don't need a lot of tools: internal/external reamer, pipe cutter and thats about it. Any other suggestions? brands?
What brand of pro press fitting do you suggest, or stay away from or are they basically the same. If I can buy local at home depot, lowes, menards that would be easier...or can go to plumbing supply house. I was going to wait to buy the pipe and supplies until I have the softener in house and confirm all of the connections. According to the rep, they are going to build softener for me with 3/4" male NPT inlet/outlet fitting...so I need 3/4" female NPT fitting. Regardless if I build my own bypass or not, I'm sketching this all out and figure I'll bring the 3/4" copper pipe down the wall, 90 degree elbow and put a 3/4" female NPT fitting on the end of each pipe....at right height to connect directly into softener.

Electrical
Since I'm moving the softener away from its current location, I need to move the electrical service for it. Currently its a 120v outlet in the ceiling joist, softener AND the Rinnai tankless water heater are plugged into it. No GFI in the outlet or the breaker. I'm planning to just cover the box and run more wire to a new box close to the new softener and close to the tankless water heater. Thinking about it, should I put both units on one circuit? neither are high amps (need to check), but not sure if its code or not for seperate circuits. And no GFI required or suggested?
