I am installing a 2" deep well and packer system for my campsite. How do you winterize it without taking everything back apart at the casing adapter?

It is hard to get a line with a foot valve to drain out. You might be able to blow it out with air. But probably best to take it apart at the casing adapter.

What are you faced with? If you have a tee at the transition down the well, you could pull the cap, and suck water with a wet-dry vac and a piece of pipe.

There's no tee, there's a cast iron casing adapter with a 3/4" pipe plug for priming. You could suck it out through there, but then you would still have the water between the pipes.

What if I removed the pump and used compressed air in the drive side of the casing adapter? I would think if I blew air in there until the air starts coming out the suction line that both pipes would be clear below the frost line. Then seal it off with a plate and two bolts till spring.

Just stick a long tube down from the air compressor. Blow the top few feet out of both lines.
Update: I used a 1" reducer with a air hose fitting on the drive side of the casing adapter. Looks like it did the trick. It blew the drive water( between the pipes) down and through the jet packer, forcing most of the water out of the suction and drive pipes. Sealed it all off with a 3/4" plastic cover and 2, 1/2" bolts. Should be good till spring.
