I understand that you don't want to use a tailpiece extension under your vessel sink.
Just have the plumber pull the sink cabinet away from the wall and put the drain wherever you darned well please. Heck you could have a bottle trap, which requires precise location coming out of the wall if you want to be really fancy and put in the money for the precision work.
It is possible to use an offset tailpiece made for handicapped sinks, and to use an AAV under the sink to vent the trap before dropping the drainage down to match your current pipe. But would that look nicer than a tailpiece extension? Not to me, but I can't judge. I would probably put up a little curtain if I did not want to see the tailpiece extension and the low trap.
Or just do the trap in chrome instead of plastic to add a little something. Or paint the plastic brown and make to make it less noticeable against the back wall. Maybe make the paint match the towels, and use a lot of towels.
