There are a fair selection of retro LOOKING modern devices out there. No reason to waste 6-gallons to flush an old toilet, for example. A ceramic cartridge in a faucet verses a washer and seat works better and lasts longer. FOr a shower, it is illegal to not have a more modern valve. To get the two or three handle look, you'd probably have to go with a thermostatically controlled valve, as most of the pressure balanced ones are single handle. A thermo valve typically uses a volume control and a separate temperature control (and maybe a third for divertor, if you don't use the tub spout).
