I have a 1930s cast iron alcove tub which at the moment with tile on 3 sides measures 57.5” by 29” . It’s outside height is 17” which we find perfect for use as a tub or a shower. So my question is what size tub do I look for that would give me that height as I assume that it is a standard 30 by 60 and I will have to order before demo begins. I see tubs described as 18” high. Is it likely that would that end up around 17” high to step over? Thanks.

The height is measured from bottom to top.
If your current tub has the flooring up to the tub, then take away the height of the flooring.
Most of the time, the flooring is laid up against the tub and you lose a bit. However that doesn't change the depth of the tub.

Tubs are measured for the rough-in...IOW, the distance between the walls without the tile or other coverings - the distance between the studs with no finish material on them. What you have is very likely a 60" tub as they come in about 6" increments above and below that. I've got a 72" tub, and would have loved to get a 78" one, but couldn't make the room for it. When you go away from a 60" tub, the prices tend to go up, as there's not as much volume or competition.
