Bosch Combi Boiler & Hot water heater

9 year old Bosch Combi Tankless Boiler hot water temperature surges too high. How is the temp regulated? Is there a part I can replace to keep the hot water temp steady at the 120 setting? Hot water Heat is working OK.

When was it descale last? Scale build up in the heat exchanger can cause lots of different issues.
