Piping Options for Water Heater

I want to replace this electric water heater (attached picture) which currently has 1/2 copper to the heater. Looking for suggestions to possibly go with CPVC. If so, do you think it is better to adapt to 3/4 CPVC from the 1/2 copper into the water heater or is there a better way?
