Best way to extend piping connections to new water heater

Starting to plan a swap out of the current gas-powered water heater to an electric heat pump hybrid one.

Existing heater has cold inlet and hot outlet at the top. All sweated copper.

New heater has cold inlet at the bottom and hot outlet at the top.

Recommendations on how to extend the piping? Since the new heater is slightly taller, I should be able to reuse the hot water line. For the cold water, do I solder new sections to cover the extra distance? Throw on some PEX to make things simpler?
