Every manufacturer has a list of all THEIR fittings, which might not be every fitting made, however. BUT there is no way to describe EVERY use of a fitting. Even if someone tried to write such a book, they would neglect some uses, and might include others which would be illegal and/or improper in some areas or for some applications.

You are starting at the wrong end of the horse. First determine what it is you want to build, then investigate the fittings which will accomplish that and comply with applicable codes.
