what is a stop fitting? 1 in x 3/4 in reducer?

Hi

I need to change the old gate valve with a ball valve that is for the main that is just inside my garage door.

The main look like 1" and there is a reducer to 3/4.

I see Home depot has 1 with and without a stop fitting. Which one do I want and why (I am asking as I like to learn)?

I noticed the one with the stop fitting says :
  • Ideal for potable water, air conditioning and refrigeration

Suppose the two pipes are in line already. Seems to me that with the no-stop fitting, you could deflect the pipes to the side, slip the no-stop fitting over the 3/4 pipe a distance, bring the two pipes back into alignment, and then slide the fitting back toward the 1 inch pipe.

no-stop fittings are for sliding a fitting on in tight spots.
the "Ideal for potable water, air conditioning and refrigeration" is nothing. Reads like AI filler.
