Supply boxes for toilets and sink vanities

Long-time lurker/homeowner here. A few years ago, I had my 1990s house re-piped from polyb to Pex B (crimp ring). Since I'm on slab and located in a fairly warm climate (NC), they ran the supply lines through the attic and down the wall cavities. Since then, I've really disliked the way all the Pex stub-outs flop around in the wall. Plus, it looks a bit sloppy. (At the time, the goal was as little drywall damage as possible.) However, I am about to do a rennovation in one of my bathrooms (new toilet, new vanity, new tub), and since I'll be removing drywall, I figure it's a good time to update the stub-outs/rough-in.

I've been researching possible options and I'm really intrigued by the recessed supply box concept or things like the Sioux Chief Omni panel. I think they look really nice and tidy. I'm also really interested in the idea of adding access panels around/below/above the outlet box, to try to make future repairs really straightforward. Is this "too much"? If this were your home, what would you do?
