So I have a problem, the pressure with climb and fall normally, then after about 10-15min when it falls down to 40psi and the switch engages it’s like you dump all the air out of the tank all at once and it drops to 0 and the switch stays engaged, then if I pump about 35-40psi into the tank the switch will re-engage and pump back up to 60 and act normal for a little bit and do it all over again

What does that mean? Does your pressure switch have a lever on it? If so, your air precharge may be a bit high.

Air precharge is measured with the water pressure at zero.

It is also possible that air precharge is OK, but the pump is slow to start at times. If you have a pump with a control box....

And there are other reasons a pump could have a delayed pump start. But first tell us if you use a lever to "pump about 35-40psi into the tank".

Most people have no lever and are better off having a switch with no lever.

Check valve must be leaking through. What type of pump is it above or below ground.

Ahh... good point.
I think you probably correctly interpreted that the pressure falls without water being used. I concentrated on the wrong thing.

The leak would take priority over the low-pressure-cutoff tripping.

As was said, if the pump comes on when no water is being used, there is a hole in the pipe or the check valve is leaking back. That kind of cycling on/off will destroy a motor and eventually it trips the internal overload and you will have a complete loss of water for a minute or two. The water magically coming back on is the auto resetting overload cooling down and restarting the pump. Fix the leak, then get ready to fix the pump as it has cycled until it is close to death.
