You might get them to stick to the ceiling but you would really be sticking them to the paper on the surface of the drywall, and if the paper cannot handle the weight it will "delaminate" and the bricks will fall down.
: : IF you are using the patio pavers that I am familiar with, you may be asking for serious trouble hanging them on the ceiling with just glue.
: hj is correct. Mex Pavers are HEAVY tiles. You might get them to stick on a ceiling with mastic, but you really don't want these heavy suckers falling down on the heads of the people in the room. There may be a way of safely placing such tiles on a ceiling, but I'd leave that to a licensed tile setter.
