$40.00 an hour? That rate goes back to the early 80's, But since digging is the hard part you will save considerably if you do it, or have it done by "cheap" laborers. How deep does it have to be in your area. If it is over 2' then it may be a machine digging job and you will not save much if you also have to rent/hire the digging machine.
: My choice would be copper. My advice is to call plumber and see if you can work a deal to do the digging yourself and let him do the pipe work. I'd hate to pay a plumber $40 or more per hour to dig a ditch, but to do the hook up right at both ends is another matter.
