If the main concern regarding a job is "cheap" then the plastics will win out. If quality is a factor, assuming there are not local conditions that preclude it, then copper will be the material of choice. But if there are local conditions, then "cheap" is not the main concern anyway.
: What is your opinion on cpvc and other forms of plastic water supply lines. Is this stuff any good? I saw the flexible stuff being used in a loft rehab I toured and also saw it on "This Old House" they made it sound like copper will go away and be replaced by the plastic stuff due to material costs and ease of use.
