I would feel save with either Copper or the CPVC. When using the CPVC, use the CPVC/BRASS adapters for going into a threaded fitting. Pipes should be allowed to move in the straps. Being plastic, there will be expansion and contraction with the changes of temperature.

Many electrical systems have used the water line coming into the home as grounding for the box. When switching to plastic piping, it is important that the proper grounding rods are used to maintain ground.
