I like copper because it is strong at the joints. Angle stops can be replaced using a ferrule puller with copper. Many plumbers, used to copper, feel safe with copper. However, in some conditions, I would prefer the CPVC. In the Seattle area, with Seattle PUD water, copper has been working fine. When using CPVC, use the better quality male adapters and female adapters. It should be fine.
