pipes sound like freight train!

We bought our old home (built 1907)one year ago.
We have put up with the pipes 'rattling' on and off. Sometimes you get the sound when the washer is running, other times when you turn off a faucet, or the sprinkler system. Sometimes it will happen in the middle of the night when everyone is sleeping. This sound is enough to wake the dead. Sounds like a freight train stopping, a wale looking for a mate and an earth quake combined! (it is very imbarassing when this happens and we have people over. They just look at us like our home is possessed!)
Usually the noise will stop shortly if you turn on a faucet some were in the house or flush the toilet. But it seems to be happening more and more often. Now everytime you flush the upstairs toilet. It won't stop unless you turn on the faucet there in the bathroom. BTW, we have really good water pressure. Someone mentioned that this might be caused from too much water pressure (?)
Are you familiar with this problem? We plan on doing some updates if we get this loan here soon, so your advice would be appreciated!
