With the exception of your A/C backup, my wife and I are now doing all of that with a 125A Square-D QO panel after replacing our old 60A fuse panel and a couple of later-added sub-panels (A/C and workshop sub-feed) about a year-and-a-half ago.

Then it is just number of spaces needed.
