Is this pump to large

I just purchased some land with a well but no pump had the well flow tested at 22gpm the well is 343' deep static is 241' the well outfit gave me 3 pump options Gould's 2 HP 10 gpm, Gould's 3 HP 13 gpm, or Gould's 3 HP 18 gpm. All with 1 1/4 sced 120 pipe. So I want to get aslant gallons a min with out hurting the well and I read in one place that 1 1/4 pipe is only rated at 2 HP is this true and on the flow charts it shows the 18 gpm would over draw the well but at 0 psi will I ever get to 0 psi I plan on building a 4 bedroom 2 1/2 bath house with bath in shop and garden and watering some grass I am super confused astronomy to wich pump and what pipe to get
 
Do you know the pumping level while they were getting 22 GPM? Because if it didn't pull down much below 241', the 2 HP, 18 GPM will work. But if it pulled down close to 340', you would need the 3 HP to get the 18 GPM, or the 2 HP, 10 GPM will get about 13 GPM. The 1 1/4" pipe is fine.
 
The logged started at 241' and 13 gpm and in 15 minutes it stoked to 248' and 22 gpm and pretty much stayed at 248' for another 1 hr and 40 minutes
