Deep Well Pump Size??

My well driller has just today completed a 250 foot weel on my property and tells me that the well is producing in excess of 25 gals per min. He said that the water level is 25 feet below grade and suggested that I set the pump at 125 feet.
If this is true what size submersible pump at 10 gpm should i use? This is a single family home 2 occupants most of the time. The run from the pump to the house is about 15 feet. Is a 1/2Hp 10Gpm pump 230 volt a good suggestion?
I will set up the well myself but need to aquire a pitless adapter and how do I drill the hole in the casing.

A 1/2hp 10 gpm will serve well. You need a metal cutting hole saw to cut the hole in the case.
