Galv pipe is prefered. PVC only if your pump installer knows what he is doing and is comfortable with the PVC.

What about the safety rope/cable?

If the pump installer wants to use a rope or a cable, then he is not confident with PVC. If a rope or cable comes loose, it piles up on top of the pump, and can prevent you from ever getting the pump out of the well.
I have heard of a few problems with the threaded belled ends not wanting to unscrew when you need it. Other than that 120 is plenty strong and a lot of people are using it. Shouldn't be a problem.

Is sch 120 pvc always threaded belled ends or is it sometimes solvent joint too? I want to make sure the pump company uses the correct type.
One of the main reasons for sch 80 or 120 is that it is thick enough to thread. Never glue anything down hole!

A (230V) 5 HP in three phase draws 17.8 amps, the book says you need a 40 amp breaker.
The 30 amp for the 7.5 HP was assuming you were using 480V three phase. With 230V the amperage doubles.
