I have a seperate shower and a seperate bath in my master bath that I am remodleing. Looking at my local home center there are lots of combonation fixtures...IE shower/tub with a common mixture valve. Can I use this type of fixture for my shower and just cap the tub fill? Also can I do the same thing for the tub and cap off the shower connection? Thanks

Yup, that's exactly what you can do. Cap off the tub side and you'll be good for the shower. As for the tub option, see if you can get a tub filler without a diverter on it.
 
If you have a "roman" tub, or deck tub, you may want to look into valves made for that.

They sometimes have larger openings that allow the tub to fill faster.
For big tubs, I like to use the Grohe 3/4" tub fillers.
