Convert 2 handle to 1 handle shower/tub

I had a 2 handle tub/shower faucet with a bad leak, and was unable to determine the brand and get replacement parts. I decided to cut out the old valve, and replace it with a new "brand name" valve. I would like to go with a 1 handle faucet, instead of a 2 (hard to find a 2 handle in the color my wife wants for under $400). The inside is a one piece surround, with the holes for valve stems at 8" apart. Can I buy a one handle faucet which will cover the holes in the surround, or do I need some sort of oversized kit? Or can I go with a 3 handle, by drilling one more hole in the surround? All work is being done through a rear access. Thanks for your help.
