This may not be the correct thread for this post, but none seem to fit.

We have a flowing or artisan well that has slowed down considerably. As soon as the weather breaks our well guy is coming out to diagnose and repair.

When repaired the well should flow around 30 GPM. This just seems like a waste to pump the water out when it flows all by itself. Is there a practical way to use this water?

The rate of flow may be a matter of the static water level and not something you can control. You may have no choice but to use a pump.
