Splitting single cold water with double valve...legal?

I have a single cold water valve coming into a bar sink, and I want to add a tankless water heater. I see they make a 'double stop' valve that is essentially a dual outlet valve. Is this code compliant if I use this to split my cold line??

The heater I had picked out actually uses 1/2" NPT...I was just wondering if it was cool to use one of those valves they put on for dishwashers...to split the cold line. Is that legit?
