Thinking about trying to switch out our 30"x60" bathtub for one that is 32" wide. Will it be difficult (and expensive) to move or adapt the pipes to fit the new faucet placement?

Good question, except it is like asking "How high is up?" Without seeing the actual piping there is no way to tell, but usually, adapting the drain to the wider tub will be harder than modifying the water lines for the faucet.

The possible problems lie in the drain relocation. No way for us to tell about the location of the floor joists and what might be encountered in moving the drain. Could be relatively simple; most likely not. (Murphy's Law)
