It's much easier to get the slip-fit unit to snug up to the wall, and should work fine. But, if you use copper and tighten the set screw too tight, you can bend the pipe and give you grief later on.

I will be installing a Kohler 3 handle shower/tub Valve (K-303-K).
I have a choice of NPT or slip fit hardware. (K-T15231-4S or K-T15231-4).
I need help in deciding between the NPT and the slip fit.

slip fit is easier to install and replace, IF the pipe is absolutely square to the wall. Otherwise you will always have a gap somewhere.
