I'm removing and replacing a 3/4 copper Tee. Is there a supplier that makes a wider tee to make up for the 1/2 inch+ of copper tube I'll be cutting off?

No, you could cut off more and use a piece of tubing and a coupling to make up the difference. Other options are a possibility but not being there to see it I cannot say what they would be.

Just one of the positive advantages of copper over galvanized! You can cut and paste to make things fit without cutting and threading and adding expensive unions. May look a bit like a hack job, but if the sweating is done right, it will work just fine.
