The differential is seldom adjustable because the greater the difference between the on/off temperatures, the longer the unit will have to run to satisfy the off setting. As a practical matter, the total run times will probably be the same. A small differential will just run for a shorter time more frequently. And in the process the humidity will increase adding to the AC load. The ideal system has the AC running fairly constantly to maintain an even temperature with maximum dehumidifaction, one reason for not using an oversized unit.
