What is better the dual shutoff 1/4 turn angle stops with two small levers like on the brasscraft website or the 1/4 turns 3 way single lever angle stops like on the watts website?

Which type will last longer or give higher flow? Is there much a a difference in use or is it just a style preference?

The bigger question is do you want to turn things off individually or not? I think either should work.

Internally they are the same, one just has two of them. It is a personal choice whether there will ever be a time when one has to be turned off without affecting the other. Not usually a consideration, unless the DW is going to be removed for a while and the sink needs to still work. I haven't seen a dual valve installed for years, if not decades.
