I recently put a new pressure switch in my well. It seemed fairly easy and seemed to work well. It does work but when water is running, the pressure switch seems to be going on and off over and over again way too fast. Also, you can see this very well when running a faucet. It also makes the shower pulse with not only pressure but water temperature change. Is there an adjustment on my new switch I need to make, or did I buy the wrong switch?

You probably bought the new switch because your waterlogged tank burned the points.

You need to check your tank. If it's a galvanized tank, you have to empty it and fill it with air. If it's a bladder tank, chances are it's beyond help and should be replaced with a good one.
