wood paneling and outlet boxes

I have a room with solid wood paneling that I want to cover up with 3/8" sheetrock without removing the old wood paneling. Trouble is, I don't want to reset all the outlet boxes forward to be flush with this new sheetrock.

Can I cheat by using longer screws to attach the outlets to the outlet boxes and use the new sheetrock to shim up the outlets to keep them flush with this new layer?

You could use box extenders, and at a minimum, use the yellow spacers made specially to go under the screw tab on the devices.
