New plumbing

We just had our 1969 house re-plumbed with all pex lines and a new softener installed. (Added a bed/bath.)
We are on a well.
Line from well to house is 1” then reduced to 3/4.
We also had a manifold installed.
Never had any issues before.
Now if we have 45 psi at the manifold and turn a faucet on the pressure will drop to 20psi and take a couple minutes to climb back to 45 when you turn the water off.
Question; Does it sound like a kink in the main line?
House is one story on level grade about 70’ from the well. We’ll is 140’ deep.

1) Never had issues before the conversion or PEX worked good and now the problem just started?
2) Check the pressure tank that is has air and the bladder is good. May have to drain it, set the pressure then turn on the pump.
3) It's not so much the pressure but how good is the water flow?
4) Is there a pit-less adapter?
5) What is the well pump pressure set for?
6) Pump size and HP rating?
7) What was the pressure before the conversion if known?
8) Where does the well pipe reduce to 3/4".
9) Without having a gauge on the old plumbing, does the water flow seems the same or greatly reduced? Th epressure may have always been like this.
10) A picture at the pressure tank connections can help.
