So we are about to buy a house and we found this concrete construction under the house in the crawl space. We asked multiple people what it is and what can be done about it and no one has an answer. It's about 6ft x 7ft and about 4ft deep. There is about 1ft water in it. No smell. I really need to know what it is before I sign the contract

It may have been a water cistern.

It could be a championship sized sump pit for your purposes.

I'm worried about the mold issues because of it. It's not easily accessible because the hatch for the crawl space in in the kitchen under the fridge

You could throw a slow-release swimming pool chlorine tablet in there if you worry. That looks like an exceptionally nice crawl space to me.

So you would just leave it as it is?
Should I get someone to pump the water out(of its even possible) or maybe getting it filled somehow ?

It looks like a health & saftey hazard to me. I'd make sure the sellers had that thing pumped out and filled in with sand before I signed anything.
