Could anybody tell me what to do when removing an old sink when not installing the new one for a few weeks in regards to the water pipes. I want to take out the kitchen units and sink and taps to prepare for decorating.

I appreciate any help as im stuck

Turn the shutoffs off and disconnect the supply lines.

Stuff a rag in the drain line to prevent sewer gas from entering your home.
 
Unfortunately there are no shutoffs under the sink only in one place in the flat which supplys the kitchen sink and the bathroom.
 
Then turn off the main that supplies both, install two valves @ the sink. Test. Then leave ones at lav. off, and turn main back on... that's about the only way I can think of. ;)
 
In the long run you'll be happy that you installed the recommended shut-off valves ... especially if you are installing a new sink. The odds are pretty good that you'll have a leak in the new plumbing for the new sink and you'll want to be able to turn off the water near the sink and not for the whole apartment.

I recommend that you get 1/4 turn shut offs or ball valve shut offs.
 
Agree with installing cut off valves. You should be able to cut off every supply line directly beneath the fixture. It's a major PITA to have to shut the whole house down to work on one fixture.
