Kitchen sink: faucet placement and offset drain quesiton

My plumber seems leery about installing a sink with an offset drain. I live in a 40-year-old house and he said it would be hard to modify the plumbing to install this sink with the offset drain.
1) Is it really difficult to do this?

Secondly, the SS undermount sink I am looking at is 17" deep (19" overall).
2) On a standard counter, is there room to install my faucet behind the sink, or would it have to be set off to the side? What about extra-deep D shaped sinks?

3) Does it matter how far apart the sprayer/faucet holes are?

The hose on the sprayer is only a finite length...if it is a long ways from the rest of the system, you won't be able to pull it out very far. The straighter your pipes are, the less likely to clog them up. With the significant height difference, he may have to move the pipe in the wall. That is eminently possible, but adds to the time and therefore the price. If you really want it and are willing to have him make the modifications, it is likley that it can be done. It is hard to tell since we can't see the situation.
