They don't "restrict" pressure, but will probably allow less flow than a full port ball valve. At high flow rates, a pressure reduction would occur. In a typical application...stove, WH, dryer, if the supply pipe and the flex line used are the proper size for the appliance, then in MOST cases, there will probably not be an issue.
