While working on a some copper in my house I ended up over heating one of the copper 3/4¨ elbows. This was with a propane torch and it turned silver. What is the long term implications of this?

If it is silver you are O.K. if it is black it needs/should be replaced.

elbow

IF you overheated it before it was soldered, then there is a good chance you burned the flux and do not have a good joint. If it was already soldered and you replenished the solder before it cooled, then you are probably okay.
