I set my rough in for a bathroom sink 20" above the sub-floor. Will this be too high for what a typical residential cabinet and lav will need? My commercial experience makes me think this will work, but measuring the drains of my friends and neighbors is making me think twice. Help please.

Vanity counter height varies, as does the sink depth. No one location works ideally (or maybe, at all) for all sinks. Some people are using kitchen cabinet height vanities, some use the 32, and some still use the 29" or another height. Then, depending on whether it is an undermount or drop-in, or a moulded, one-piece...the height may need to be adjusted.
