I am remodeling my bathroom and I used the sharkbites caps to cap off the 1/2 " copper pipes while I remove the vanity and do some tile work. I saw in the hardware store that they also have sharkbite corner bendes and T's and other stuff for plumbing. Would this product work for long term and hold up over many years or is a guy better off to solder the copper pies with copper fittings? It just looks easier to use the shark bites and where the shark bites will be installed I could check for leaks easily under the sink and in the basement. Should I go this route or solder the copper fittings?

They are an expensive way to do a job, and who knows how long they will last. In some installations they could last forever, but for you they might fail in a very short time. There are no guarantees as to their longevity in any one installation.

The use of them for end caps is a great thing I do it myself on remodel stuff.

As for extensive use of them... No Way!
They are too expensive and the fact that the connection can rotate just says no.
In a tight spot, or where sweating pipe is extremely difficult they are a great tool to use to get the job done.

They have their uses, but the plumbers feel a lot better with standard piping systems, whether that be copper with soldered fittings, or with a PEX system.
The sharkbite systems has only been out for a little while now, and like Redwood mentions, the fittings do spin. We like something more solidly attached when they are buried in a wall.
It's much less money to buy the inexpensive copper fittings and solder them together.
Much more rigid too when finished.
