I just replaced both shower faucet compression valves and valve seats. When I installed them I greased them with plumbers grease, but after a day or so they are hard to turn again. What did I do wrong?

Do those stems have a packing gland that you may have over tightened ?
Or do those stems use o-rings for a stem seal ?
If so , did the stems come with the o-rings on ?
What do you mean when you say compression valves ?
