What type of tubing is acceptable for this? I could run it in copper, but it is really expensive right now. The rest of the install is in copper. Can I just run it in regular cpvc and use normal connections?

You can use CPVC after the valve. There is no pressure.
 
Even galvanized pipe would be OK because not only is there no pressure, but the is very rarely any water to cause rust or corrosion.

A strict interpretation of the code, which our inspectors use, is that the interior of the discharge pipe MUST be a full 3/4" diameter. That precludes ALL cts plastics, and PVC because of its inability to handle hot water, and corrugated flexible copper pipes. About all that is left is copper or galvanized steel.
